Since my New Year’s Resolution was to cook more, I was gifted a plethora of cookbooks for Christmas (and one for my birthday- not pictured, the classic Betty Crocker Cookbook). The endeavor has gone quite well so far, as I’ve exceeded my goal of cooking at least one new recipe per week. Thanks to the extensive collection pictured above, I won’t have to use Google for inspiration for at least a while now.
The one night we didn’t cook this week, we went out for my BIRTHDAY! Jason took me back to Taverna Cretekou, the same place we went with all my family and friends the night we got engaged.

We both got lamb dishes, and ended the night with some Jeni’s Splendid Ice Cream:

Earlier in the day, my birthday was off to a good start when I nailed my run. I had a [1M warm up, 4M marathon pace] workout planned, and it felt so effortless and fun. I probably went a little too fast given that my goal pace is 8:15, but it was my birthday so I did what I wanted 😀

In pursuit of another goal of mine to stay healthy and injury-free, I also managed to accomplish some strength/weights after my run. This is the workout I made for myself:
